Ubriaco del Vajont
The Ubriaco del Vajont has a particularly soft paste with a fruity and aromatic fragrance and a strong, almost sharp flavour. Externally it is violet if it has been left in red wine marc and bright straw yellow if the marc is from white grapes.
The Ubriaco del Vajont is a Montasio type of cheese, typical of the Veneto region, which is aged under marc. The cheeses, when still fresh, following an ancient procedure, are plunged into must and mixed with solid parts of Cabernet and Merlot grapes for 5 days; after this period, the cheeses are aged in special cool and ventilated places for a minimum of 120 days up to a maximum of 2/3 years.
